Easy Apple Crumble

Ingredients

  • 4 medium baking apples
  • 2 1/2 tablespoons cold butter
  • 1/3 cup + 2 tablespoons brown sugar
  • 12 packaged oatmeal cookies
  • 1/2 teaspoon cinnamon
  • pinch of salt

Instructions

  1. Preheat oven to 425F. Peel apples and chop into 1/2-inch cubes. In a large bowl, combine 1/3 cup of the brown sugar, 1 1/2 tablespoons of the butter (cut into small pieces), and the cinnamon and salt. Add apples and toss to combine. Divide mixture into 6 small ramekins.
  2. Crush the oatmeal cookies (you can use a food processor or place them in a ziplock bag and crush them with a rolling pin). In a medium-sized bowl, combine the cookie crumbs, the remaining tablespoon of butter (cut into small pieces), and the remaining 2 tablespoons of brown sugar. Sprinkle over apple mixture in the ramekins.
  3. Bake for 10 minutes, then remove from oven and stir to mix well. Return to oven and bake another 5 minutes until bubbly. Serve warm (Careful–ramekins are hot!) or let cool and serve with whipped cream.
