Crazy Good Cran-apple Crumble Recipe

Ingredients

  • 1 Lb raw cranberries
  • 5 med gala apples, cored, sliced & cut into 1/2“ cubes (skins on)
  • 1/2 c Agave syrup
  • 1/2 c firmly packed light brown sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 c water
  • topping:
  • 1c quick cooking oats
  • 6-8 ginger snap cookies
  • 2 tbs vegan margarine (I use Earth Balance) melted
  • 1c light brown sugar

Instructions

  1. Place cranberries and sugars in a 3 qt saucepan. Heat on medium ’till cranberries pop. Add apples and remaining ingredients and cook until apples are tender, stirring occasionally, 45 minutes.
  2. Taste for spices and sweetness and adjust if necessary.
  3. Process cookies in food processor ’till fine crumbs. Add oats, margarine and sugar and process until mixed.
  4. Put cooked fruit into 3 qt ovenproof cassarole dish which has been sprayed lightly with vegetable cooking spray.
  5. Place topping evenly over fruit and bake for 30-45 minutes, ’till bubbly.
  6. Serve with non dairy ice cream or non dairy whipped cream.
