Apple and Coconut Crumble

Ingredients

  • 6 apples (peeled and thickly sliced)
  • 1 cup Water
  • 1 tbsp Sugar
  • 4 cloves
  • 1 tsp vanilla extract
  • 1 cup self-raising flour
  • 100 grams butter chopped
  • 1 cup brown sugar
  • 1 cup dessicated coconut
  • 1 cup almonds chopped

Instructions

  1. Preheat oven to 180C.
  2. Combine apples (peeled and thickly sliced), water, sugar and 4 cloves in a saucepan over low heat. Cook until apples are tender. Discard cloves, add 1 tsp vanilla extract and spoon mixture into a shallow, lightly greased ovenproof dish. Place self-raising flour in a bowl, then rub in chopped butter until well combined. Add brown sugar, desiccated coconut and chopped almonds and mix well. Spoon crumble mixture over apples and bake for about 25-30 minutes or until crumble is golden.
  3. Serve with vanilla ice-cream.
